Salad
1 stick of celery, finely chopped
1/4 of a cucumber, sliced
1 small red onion, thinly sliced
2 cups of pork mince
1 lemongrass stalk, finely chopped
Handful of coriander leaves
2 handfuls of rice noodles
1/2 - 1 red chilli, sliced
Dressing
2 tbsp fish sauce
4 tbsp lime juice
2 tbsp water
2 tsp sugar
2 garlic cloves, crushed
Heat a little sunflower oil in a frying pan and over a high heat fry the pork mince with the lemongrass until browned. Season with a little salt whilst its cooking.
Make the dressing by whisking together all of the dressing ingredients.
In a mixing bowl, combine the celery, cucumber, red onion and coriander. Taste the chilli to check the heat level and add the amount desired to the bowl along with the pork mince.
Cook the rice noodles according to the packet instructions. Drain and add to the bowl with the salad. Pour the dressing over and mix well with a pair of tongs. Serve immediately on plates or bowls.
